Start eating a low net carb diet. Try the keto diet, carnivore diet, and banting diet.

Maybe start with the whole 30 diet so you can see if you have any allergies to any of the likely suspects.

Stop eating any wheat/grain bread, potatoes, pasta, rice, or other sugar/starch foods. Eat high fat, medium protein, low net carb foods. Don't use margarine, canola oil, corn oil, or other seed based oils. Use ev olive oil, avocado oil, coconut oil, ghee, or quality butter.
Arterial plaque is the result of the body trying to heal inflammation in the wall of the arteries. If your A1C is high, using the diets above should get it down and allow your body to heal itself. Take a plant based multi-vitamin/multi-mineral and a fish oil like fermented cod liver oil on a regular basis. Niacin, Vit C and Lysine will help with lowering inflammation. If you feel you must go vegan, have a side of broccoli with your prime rib.

Once you’ve been eating low net carb for a while, try skipping a meal or two on a regular basis. Some folks get to the point where they regularly eat only one meal a day giving their bodies a larger amount of time to go through the process of cleaning up the waste and cruft.
