Season the outside with Montreal steak seasoning, then into a hot oven for 30 minutes. Cover it, turn it down and roast. Last 45 minutes, uncover it and turn it up. It's always good. Been doing it that way for 40 years and my mom before me (except she never injected hers.) It's always been excellent. |

The only thing you miss out on is the whole-bird presentation (because it falls apart). last two birds I had I cooked it upside down.. sure it looks funny but best way to make it moist. |

You clamp the Red cable to the right wing, and clamp the Black cable to the left wing. It's very important you do this correctly, or you could damage your bird. Then, you clamp the jumper cables to your car battery, Red to positive, and Black to negative...although some people will say you should clamp the Black to metal. I'm not going to argue that here, because that's not the point. For larger birds (20-50 lbs.) the car should be running, so you don't drain the battery. You only want to thaw the bird using this technique, not cook it. So be careful! It's easy to burn the bird to a blackened crisp if you jump it for too long. The bird may smoke a bit at first, as this is just some of the moisture cooking off. When it starts to smell just like roasted turkey...stop jumping! If, you want to take a gamble and just simply cook the entire bird this way, expect that some areas may get a little well done, especially the dark meat and stuffing. I was going to suggest placing the bird in a bag and then cold water, but this suggestions much better. Other than that, long and slow can work for frozen, tastes amazing but will not look the part as someone said earlier. |
