Why is Saturn called the grim reaper?

Life ends. For everyone. From mega-rich celebrities to those on the very lowest end of the socio-econmic scale. Plants, animals too - death is all around. And so is growth, the Jupiter side of life.
So Saturn is, on a symbolic level, about “death.” And endings. So Saturn is naturally associated with the grim reaper.
But Saturn as grim reaper is about Saturn as the party-stopper - death.

Saturn rules agriculture and that requires organization and accurate timing, but it ends with reaping what has been sowed and with threshing and separating the chaff from the wheat. Then the chaff is burned, allways!
