OP, I will answer you to the best of my ability.

First, you're asking two different questions. There are many that believe in God and evolution. This website was made by Christians who accept the scientific consensus regarding the age of the Earth, and evolution: [link to biologos.org (secure)]

Now, the main reason people don't believe in a 'Creator' is because they simply weren't raised to do so, and/or they haven't seen sufficient evidence for one.

As for why people choose evolution... choose is a strange word to use. I don't choose to believe in germs, or gravity, I am convinced of them by evidence. People are convinced of evolution because there is a lot of evidence for it. I can't stress that enough, the evidence is overwhelming, and every test that our best minds can come up with points to evolution theory being correct.

Creationists will tell you that it's because we want to live in sin or some such personal slander, but the simple answer is evidence.

By ignorance(as in "one who doesn't know"), people, specially christians, tend to think that evolution is an "opposition" to god. They tend to think of it as a "counter-religion" argumentation and that somehow its main goal is to disprove god. So they base their argumentation on that. Evolution(I said that in a post earlier), is not something to be believed in. Using your example, I don't "believe" in gravity, I don't "believe" in electricity, I just understand it as a non-magical thing.

One of the things that religions people have a hard time with, is within their own realm: Religion vs. god. They tend to think of both things as a "big unseparable" mix. And this line of thought is the same regarding evolution, they mix VERY different subjects into one big "soup", usually: evolution, abiogenesis and cosmology, all in one single point. This makes things VERY confusing, because on their point of view, it is all the same thing, when nothing can be further from the truth. And again, it all comes down to ignorance, maybe even ignorance by submission. There are several badly intentioned people that manipulate other good people. So many have only "pulpit knowledge" of the subjects(evolution, cosmology and abiogenesis) and end up with a real messed up idea of what science actually is.
