Potatoes and carrots can be stored in a root cellar. Apples, cabbage, winter squash. There's more, but my mind went blank while I was typing.
I know there are tons of videos on utube and I remember several threads from about 10 years ago about it, too.

So I dumped out my 50 lb bag of potatoes and some onions in (separate) ventilated boxes and put them down there to see what happens. Make sure to do bug patrol. A lot of bugs like the glue in cardboard so spray monthly. Yes! Roaches LOVE cardboard! The corrugated kind. I don't know about spraying for bugs around the vegetables though. mint.catnip,etc. there are herbs. best learn them now. grow grow grow.DOOM is not leaving.
