All the chefs I know (I know chefs with Michelin stars) who taste soup and sauces with a spoon use the same spoon to add more ingredients or to stir. Let me tell you another secret: the best way to check if the oil is hot enough is to spit a little in it. |

I had a cold the last few days, felt weak, no appetite, etc. The cough started dry, and being cooped up and reading you loons the last few days had me fearing the worst. Thankfully, today the cough has loosened, and the sniffling, dripping nose has begun to be relieved of some pressure. Doom off. For me. For now :) |

Not eating there, all employees are chinese girls and live in 1 rented house nearby, no cars. The shopping center is owned by a chinese guy who also has girls at the nail place-no english, they just gesture at you. He's creepy, scary kind of man. |

It was in the southwest part of the city--sort of a new area but its been open for 14 years. The manager/owner said the people don't understand the rules--same infractions multiple times over--just rotting filth. I suspect they get new hires from Long Beach on a regular bases. They have drastically different standards in the old country. The only way I would eat in one of those places is if I knew the people that owned and operated it. Most anyone can be Americanized given time but China is number two after Mexico for illegal aliens. A constant massive flow of unenlightened people. |

This was before the news hit about the virus. It was packed, and Chinese people actually work at the location I visited. About a week or so ago, my daughter and I became ill with a virus. It's not bad enough to keep you "down"-- but I feel like crap. My nose is stuffy, my body aches, and my stomach was upset at the beginning. I know this is not likely the CV, but my recent visit to a PHO cafe scared me. It is busy usually. It was DEAD. No one was there at all. Yes, people are worried- even if they are not saying so. |

Let me tell you another secret: the best way to check if the oil is hot enough is to spit a little in it. In college I worked as a short order cook in a chain (decent one) restaurant. One evening, right at 2am close someone came in drunk and wanted fries. "sorry fryer is off". A while later, waitress returns, he insists on fries. Me: Don't have them....customer insisted. So...the 19 year old me, found fries around the fryer, on the counter, and got down on the floor and pulled fries from holes in the rubber mats, and near the wall where they had not been stepped on. I acquired enough fries to make an order. Put it under the heat lamp for 5 minutes and rang the bell. "Order up" Moral: Don't fuck with the cooks at end of shift, and don't trust restaurant hygiene. I'm not from Canada, not that there's anything wrong with that..... |
