"I settled for making potato and bean burritos which were still pretty good with some smoked cheese (got a few cheese wheels a while back and they seem to be doing fine)."

Recipe for potato and bean burritos please.

Once had potato and hamburger burritos and loved them. Coworker said his wife made them so I couldn't get the recipe. Have salsa and canned green chilies, onions, garlic.

Dice an onion.

Throw some olive oil in a frying pan, put onion pieces in, throw a lid on it.

Saute said onion pieces, flip them a few times in the process.

When onions are nice and sauteed (clear and just a touch black on the edges), add cooked red beans (I just dump the whole 600 gram jar in - cooking for a few people).

Liberally use Mexican cheat powder (burrito flavoring) to taste.

Finely chop a pepperoncini or two and sprinkle it in.

Add a few squirts of Tabasco sauce.

Mash the beans and ingredients with a fork, put the flame on low, stir/flip the mixture a few times until it is a nice thick consistency.

I'm still using pre-made burrito wraps (tortillas) because I still have them.

Heat each of them directly over a flame for a few seconds until they become soft.

Place them on plates.

By now your potatoes should be soft. Drain the water, throw them back in their pot, add some Mexican cheat powder and a spoon of butter to help get it mixed in. Mix it all. The potatoes should be soft enough to fall apart.

Throw the potatoes on top of the finished beans in their pan and spread them out so they create a top layer, grate a healthy amount of cheese on top of that to create a third layer, put the lid back on until it is thoroughly melted.

Remove lid. Use a spatula to divide the pan into a number equal to the amount of burrito wraps you have.

Deposit each portion into a wrap so they each get an equal portion of all the layers of ingredients.

Wrap them so nothing will fall out the bottom.

Eat.

It's a sad fact that absolutely no one outside of the American continents can actually make decent Mexican food.

I've been to dozens of "Mexican" restaurants in dozens of countries and they all fell short. So, I finally gave up on the restaurants and started cooking it myself, wherever I happened to be in the world.

I just had smoked ham in green beans and taters while kicking myself for not feeling up finishing the fruit tree pruning yesterday. I wore myself out the last few days. Now I may have to finish in between rain showers. Spring is coming on way to fast.

I have never heard of fire cider. I looked it up and it looks amazing. Love hot peppers, horseradish etc.

I really like proper cider too, is there an alcoholic version of fire cider???? I clearly have not lived enough

I make lots of cocktail shrubs, which are ACV with herbs, spices and berries, they are awesome in drinks with booze and tonic or club soda

I have one right now that’s ACV with pineapple, fennel, mint and I bit of ginger, pour it over sparkling water

We've got garden plans along with some painting and maintenance things to do immediately.
We agreed to take 2 weeks and then reevaluate the quarantine. But I think we're staying in.
Going to teach our teen to can and do some electrical work.
Oddly, she doesn't seem excited by those things! Weird, huh?
Things are bad enough, there is no need to make anything up.

The original fire cider can be used as a mixer, in salad dressings, over rice

I make lots of cocktail shrubs, which are ACV with herbs, spices and berries, they are awesome in drinks with booze and tonic or club soda

I have one right now that’s ACV with pineapple, fennel, mint and I bit of ginger, pour it over sparkling water

Dice the potatoes and throw them in a pot of cold water, boil until they're soft.

Dice an onion.

Throw some olive oil in a frying pan, put onion pieces in, throw a lid on it.

Saute said onion pieces, flip them a few times in the process.

When onions are nice and sauteed (clear and just a touch black on the edges), add cooked red beans (I just dump the whole 600 gram jar in - cooking for a few people).

Liberally use Mexican cheat powder (burrito flavoring) to taste.

Finely chop a pepperoncini or two and sprinkle it in.

Add a few squirts of Tabasco sauce.

Mash the beans and ingredients with a fork, put the flame on low, stir/flip the mixture a few times until it is a nice thick consistency.

....

I'm still using pre-made burrito wraps (tortillas) because I still have them.

Heat each of them directly over a flame for a few seconds until they become soft.

Place them on plates.

By now your potatoes should be soft. Drain the water, throw them back in their pot, add some Mexican cheat powder and a spoon of butter to help get it mixed in. Mix it all. The potatoes should be soft enough to fall apart.

Throw the potatoes on top of the finished beans in their pan and spread them out so they create a top layer, grate a healthy amount of cheese on top of that to create a third layer, put the lid back on until it is thoroughly melted.

Remove lid. Use a spatula to divide the pan into a number equal to the amount of burrito wraps you have.

Deposit each portion into a wrap so they each get an equal portion of all the layers of ingredients.

Wrap them so nothing will fall out the bottom.

Eat.
