Making chicken vegetable soup with dumplings and egg noodles. Freezer & refrigerator is stuffed, as is my cupboards.

Last week I made potato soup with homemade vegetable broth.

Will get to baking in a few days. Would rather cook than clean my condo. Wish I could hire one of you who loves to clean and organize.

find something to do, internet, hopbby a online course
get dressed each day like you going to work
keep your routine

Me too, isolation is normal. I am working on my seedlings for the garden, they stay warm in my room with me at night with the chicken LOL. It snowed again today, cabin fever makes me a bit silly, down to only two ft of snow, it will be an early spring. Enjoying my last bit of free lazy time, spring farm work will be sun up to sun down with the insects out in full force, aching all over. Trying to work out a bit each day to get in shape from a long lazy winter.

Recipe for potato and bean burritos please.

Once had potato and hamburger burritos and loved them. Coworker said his wife made them so I couldn't get the recipe. Have salsa and canned green chilies, onions, garlic.

Dice the potatoes and throw them in a pot of cold water, boil until they're soft.

Dice an onion.

Throw some olive oil in a frying pan, put onion pieces in, throw a lid on it.

Saute said onion pieces, flip them a few times in the process.

When onions are nice and sauteed (clear and just a touch black on the edges), add cooked red beans (I just dump the whole 600 gram jar in - cooking for a few people).

Liberally use Mexican cheat powder (burrito flavoring) to taste.

Finely chop a pepperoncini or two and sprinkle it in.

Add a few squirts of Tabasco sauce.

Mash the beans and ingredients with a fork, put the flame on low, stir/flip the mixture a few times until it is a nice thick consistency.

....

I'm still using pre-made burrito wraps (tortillas) because I still have them.

Heat each of them directly over a flame for a few seconds until they become soft.

Place them on plates.

By now your potatoes should be soft. Drain the water, throw them back in their pot, add some Mexican cheat powder and a spoon of butter to help get it mixed in. Mix it all. The potatoes should be soft enough to fall apart.

Throw the potatoes on top of the finished beans in their pan and spread them out so they create a top layer, grate a healthy amount of cheese on top of that to create a third layer, put the lid back on until it is thoroughly melted.

Remove lid. Use a spatula to divide the pan into a number equal to the amount of burrito wraps you have.

Deposit each portion into a wrap so they each get an equal portion of all the layers of ingredients.

Wrap them so nothing will fall out the bottom.

Eat.

I make a chia seed with probiotic almond milk (homemade), add in some pure monk fruit extract (no additives), vanilla, pinch of salt, pumpkin pie spices (mccormick), and let the chia seeds soak it up, add water as needed. Then add in some frozen blueberries. Tastes like blueberry muffins.

Sauerkraut Spam balls, deep fried, excellent.

SAUERKRAUT BALLS
1 can luncheon meat (Spam, or other)
6 tbsp. flour
1 med. onion, chopped fine
1/2 c. boiling water
4 tbsp. butter
1 lg. can sauerkraut
2 beef bouillon cubes
2 eggs
2 tbsp. milk
2 c. bread crumbs
1 c. (about) flour (to roll balls in)
Brown onions in butter. Dissolve bouillon cubes in boiling water. Add flour to onions. Add bouillon cubes to onions; set aside and let completely cool. Drain sauerkraut well; grind sauerkraut and meat together. Add to onion mixture and stir well. Form into balls.
Beat eggs with milk. Roll balls in flour, then dip in milk, egg mixture, then roll in bread crumbs and deep fry in hot oil. May freeze and reheat in oven at 350 degrees for 15 to 20 minutes.


Today IT officially recorded in my county,Volusia. BIke Week. I had promised myself to stay home except for dog walking after this big date. However, one more prep run for outdoor propane grill and a few groceries tomorrow.

Staying in will be easy for me. Have a saltwater pool. As long as the electricity stays on,I have all my preps for the pool. Also live on a saltwater canal and can fish and have kayaks.Indoor stoves run a huge propane tank. Have an inverter for charging electronics and running fans.


3 dogs, but fenced yard. In case of total lockdowns, I can play chase the ball instead of walking them.

Raised bed gardens and can grow year round here. Closing my airbnb apt and renting long term to ex military guy. Am 65 year old woman, good shot. bought imaginary holster for imaginary revolver with imaginary hollow points.

My wifelet was going to go into town Monday night drinking, we had a big argument about how stupid it was considering bloke from Iran with coronavirus had been wandering around our town for 3 weeks before he went into the doctors.

She texted her friend 'is this wise considering the coronavirus thing?'

She got a reply, 'Yeah I was going to say I've just come back from Italy, but don't worry I wasn't in an affected area'

I think she might have learned a lesson.

will saute onions & garlic when they're near done. a little liquid smoke.

The ham shank sounds like a good place to start.


It's a sad fact that absolutely no one outside of the American continents can actually make decent Mexican food.

I've been to dozens of "Mexican" restaurants in dozens of countries and they all fell short. So, I finally gave up on the restaurants and started cooking it myself, wherever I happened to be in the world.

My daughter’s mother-in-law is like that, she travels to Africa a couple times a year for a foundation she has there, always gets sick and comes home wanting to see the grandkids

I just had smoked ham in green beans and taters while kicking myself for not feeling up finishing the fruit tree pruning yesterday. I wore myself out the last few days. Now I may have to finish in between rain showers. Spring is coming on way to fast.

It's a sad fact that absolutely no one outside of the American continents can actually make decent Mexican food.

I've been to dozens of "Mexican" restaurants in dozens of countries and they all fell short. So, I finally gave up on the restaurants and started cooking it myself, wherever I happened to be in the world.

i'll soak a pound of beans tonight, rinse, then into the crock pot on high. 2 hrs later, in goes the ham shank until the meat is falling off the bone. i take the meat out then and add rice. once the meat cools a bit i take the meat off and shread it and put it back in ... then saute the veggies and toss that in ... seems to work. no added salt with the ham :)

trying the greek peppers tonight. surprised i never thought of it. i always have a big jar!
