Quoting: NotStarvingActress Recipe for potato and bean burritos please. Once had potato and hamburger burritos and loved them. Coworker said his wife made them so I couldn't get the recipe. Have salsa and canned green chilies, onions, garlic. Dice the potatoes and throw them in a pot of cold water, boil until they're soft. Dice an onion. Throw some olive oil in a frying pan, put onion pieces in, throw a lid on it. Saute said onion pieces, flip them a few times in the process. When onions are nice and sauteed (clear and just a touch black on the edges), add cooked red beans (I just dump the whole 600 gram jar in - cooking for a few people). Liberally use Mexican cheat powder (burrito flavoring) to taste. Finely chop a pepperoncini or two and sprinkle it in. Add a few squirts of Tabasco sauce. Mash the beans and ingredients with a fork, put the flame on low, stir/flip the mixture a few times until it is a nice thick consistency. .... I'm still using pre-made burrito wraps (tortillas) because I still have them. Heat each of them directly over a flame for a few seconds until they become soft. Place them on plates. ----- By now your potatoes should be soft. Drain the water, throw them back in their pot, add some Mexican cheat powder and a spoon of butter to help get it mixed in. Mix it all. The ham shank sounds like a good place to start. It's a sad fact that absolutely no one outside of the American continents can actually make decent Mexican food. I've been to dozens of "Mexican" restaurants in dozens of countries and they all fell short. So, I finally gave up on the restaurants and started cooking it myself, wherever I happened to be in the world. i make decent food. i get no complaints when i cook for others i'll soak a pound of beans tonight, rinse, then into the crock pot on high. 2 hrs later, in goes the ham shank until the meat is falling off the bone. i take the meat out then and add rice. once the meat cools a bit i take the meat off and shread it and put it back in ... then saute the veggies and toss that in ... seems to work. no added salt with the ham :) trying the greek peppers tonight. surprised i never thought of it. i always have a big jar! Mix it all. The potatoes should be soft enough to fall apart. ----- Throw the potatoes on top of the finished beans in their pan and spread them out so they create a top layer, grate a healthy amount of cheese on top of that to create a third layer, put the lid back on until it is thoroughly melted. ----- Remove lid. Use a spatula to divide the pan into a number equal to the amount of burrito wraps you have. Deposit each portion into a wrap so they each get an equal portion of all the layers of ingredients. Quoting: TlvmmCpoft Dice the potatoes and throw them in a pot of cold water, boil until they're soft. Dice an onion. Throw some olive oil in a frying pan, put onion pieces in, throw a lid on it. Saute said onion pieces, flip them a few times in the process. When onions are nice and sauteed (clear and just a touch black on the edges), add cooked red beans (I just dump the whole 600 gram jar in - cooking for a few people). Liberally use Mexican cheat powder (burrito flavoring) to taste. Finely chop a pepperoncini or two and sprinkle it in. Add a few squirts of Tabasco sauce. Mash the beans and ingredients with a fork, put the flame on low, stir/flip the mixture a few times until it is a nice thick consistency. .... I'm still using pre-made burrito wraps (tortillas) because I still have them. Heat each of them directly over a flame for a few seconds until they become soft. Place them on plates. ----- By now your potatoes should be soft. Drain the water, throw them back in their pot, add some Mexican cheat powder and a spoon of butter to help get it mixed in. Mix it all. The potatoes should be soft enough to fall apart. ----- Throw the potatoes on top of the finished beans in their pan and spread them out so they create a top layer, grate a healthy amount of cheese on top of that to create a third layer, put the lid back on until it is thoroughly melted. ----- Remove lid. Use a spatula to divide the pan into a number equal to the amount of burrito wraps you have. Deposit each portion into a wrap so they each get an equal portion of all the layers of ingredients. Wrap them so nothing will fall out the bottom. Eat. Adopt me? I guess someone appreciates my cooking. Throw some garlic and bacon in there and I'll be forced to consider proposal.
