I also just started making croissants any tips on that would be appreciated too. I've had success a couple times but they are hard to get perfect. How many folds should 5hey have to get that really flaky texture. Thanks.

For the brioche tressée you will need :

26 centiliters of milk
100 grams of sugar
120 grams of butter
A pinch of salt
30 grams of yeast
2 eggs
500 grams of t45 or T55 flour
Some almonds

Warm up your oven at 220 degree celsius

Mix the yeast in 6 centiliters of lukewarm milk
Let some bubbles appear
Then put the eggs and the flour

Make the rest of the milk boil at a small fire

Put the sugar, the salt and the butter in the milk.

Mix that liquid with the yeast you mixed before.

Knead everything for 10 good minutes, more if you're motivated like me!!!!!!

Make a ball with your dough and let it rest for 2 hours so it rises.

Divide the dough in 3 parts, and try to make a braid (I know it is not this easy don't hate me) then let it rest for 30 minutes.

Put some almonds on your braid

Put it in your oven 40 minutes

Anyways, we didn't buy it because it was too expensive but if Trump does not get reelected then we are moving to France. We are young enough to start life over. I'm 32 she's 24. People from Paris go to South of France in summer because they are fed up of the bad weather of Paris, people from South of France in general they prefer to go at the mountains, they stay in the alps (like me) or they visit corsica and get in trouble because we don't really like continental French people. In corsica we want to be independent, we don't like to be called French. We call French people "Pinzut".

Yes. I'm familiar with this. Paris has pretty bad weather. Most French people stay in France for vacation.

I love the alps! I went skiing there a few years ago in Chamonix. Stayed for 3 weeks. Visited Mont Blanc. Drank local beer from the mountain. So awesome. You're very lucky to live in such a beautiful country!
