I already have posted the croissant recipe on this thread, the only difference is that you have to add your ham and cheese before rolling it and if you prefer, you don't put any sugar.
This is quite simple but really good, I hope you have liked it, there are good Bakers in Nice sir/miss.

Do you have a good yeast ratio to use for freshly ground whole wheat (red or white)? If I use 2 tsp of active dry yeast with all purpose flour, what would your recommend for whole wheat? I can't seem to get it right. Whole wheat seems to just end up hard.
