Re: I'm A Baker In South Of France, Ask Me Anything
How about a good sourdough baguette recipe? Is it possible?

I have a great starter..since 1984 and it makes delicious regular bread with a nice chewy crust but I haven't the slightest clue how to do a baguette.
 Quoting: drinking buddy

There is a recipe for a traditional bread in this thread. If you want a baguette instead, all you have to do is change the shape of the dough before putting it in your oven and take it out of the oven when it has a golden color.
 Quoting: FranceBakerCorsica

does it use sourdough though, or a conventional yeast? and are the specifications for a flour with a certain amount of protein or gluten?

Thanks..sorry to ask so many questions, just that flour is still a little tough to come buy and I don't want to mess up.
cheers

BMW R80GS was my bike. I had to sell it though so I could get a decent car that fit 4 kids and a cello.

I had a motorcycle in my young years. I almost got killed getting hit by a moron while coming out of an underpass near Champs Elysées. It was dark. I ended up unconscious and in a coma. I still can't remember anything of what happened after I came out of the underpass and got hit.

I still love motorcycles. The bigger, the better. I would love going for rides in the mountains of Switzerland, any place with a beautiful scenery. The Moyenne Corniche from Nice to Monaco is a really beautiful trip with really nice views. Grande corniche is nice too.

Have you been to Coursegoules? That is a really nice place. Better go off season with no tourists.

Corsica also has lots and lots of beautiful scenic roads.

A motorcycle equals true freedom. Want to take me for a ride? I am a taker.

Corsica is beautiful.

Look at each section here, enjoy the pictures and use your translators.

Sadly there are also bad people in Corsica. Some of the families who are hating each other to the point of murder to eliminate the ones who will come in their way.

I have seen it. This is because of greed. They want to take it all from others so they go all the way to crime.

Shameful but what do they care.

Re: I'm A Baker In South Of France, Ask Me Anything
Do you have a recipe for Canele? I like them!! In Bordeaux, I was eating So many of them
 Quoting: abeliever

Hello, yes I have a recipe for the cannelés but you are going to need baking pans to make them, otherwise it is not cannelés.

So your recipe for 16 cannelés

You will need :

50 centiliters of milk
2 eggs
2 egg yolks
Half a pod of vanilla (not chemical fuck this)
3 tablespoons of rhum
100 grams of flour
200 grams of sugar in powder
25 grams of butter

Here we go now!

Make your milk boil with your vanilla pod and your butter

On the other side mix the flour and the sugar and put your eggs (not the yolks) and then put your boiling milk

Mix all this slowly until you obtain a fluid liquid, let it become cool, then add the Rhum

Put this in the fridge for 24 hours

The next day take your liquid out of the fridge an hour before you start the next phase

Warm up your oven at 270 degree celsius

Pour your liquid in the baking pans, fill the baking pans not entirely, but at 90%. Cook them at 270 degree celsius for 5 minutes, then cook them at 180 degree celsius for at least an hour, the cannelé must have a brown crust and must be soft on the inside.

Take them out of the baking pans when they are still hot

Bon appétit, here are some cannelés

Merci Alexandre !

Is it Sunday and Monday? I need to know. I don't want to show up at your place and find the Boulangerie closed.

Hello friend,
Nice to see you posting again!

I had to look up information about Seranon. I never heard of this place before.

Info and pictures (English)

It looks nice and natural. I am happy you are giving work to smaller local production.

I am sure your clients will appreciate the difference.
