I know you are a baker but have you made a "French" omelette before? I followed Jacques Pepin's tutorial on youtube and it actually worked and was better than the "country" omelettes I made my whole life.
 Quoting: Anonymous Coward 78117343

If you want to make an omelette that feels really lightweight in your mouth, you should add a tiny amount of beer, but I'm not sure how much precisely, I could find this for you if you are willing to test it! Making an omelette doesn't take a lot of time, it wouldn't be a waste of time.
 Quoting: FranceBakerCorsica

Sure! I just happen to have beer. It is a holiday weekend here though so I better make it tomorrow to be safe. Here is the Pepin vid I watched:

Let's talk yeast...where do I get good yeast. Don't say the store. Not there.
 Quoting: Darpa 77745565

If you have a French store in your city I think you can find good yeast, you can do yeast yourself (I don't because I need yeast in big big quantities it would take too much time and I have a family to take care of) I could try to find you a recipe to make some yeast, would you be OK with this??
 Quoting: FranceBakerCorsica

No French stores but we do have some hi end gourmet stores. I might have to look further out. I'd be curious of a receive you might have for making some good live yeast for some soft and chewy pizza dough that has a unique depth of flavor. The traditional blocks of yeast are so cliche, and dry yeast is a joke.

The dosage is made for 2 persons

Warm up your stove

Beat your eggs really fast from 3 to 5 minutes so it will be really light

Add 15 centilitters of beer to your beaten eggs

Once your stove is really warm, it is time to pour your mix in the stove

Add some salt and some pepper (not too much pepper be careful tounge)

It is over you can test it my friend! applause

Recipe for homemade yeast

You need!

100 milliliters of pasteurized beer (pasteurized is really important)

1 teaspoon of sugar

1 tablespoon of flour

Pour the beer in a bowl
Add the sugar and the flour
Mix the ingredients with attention
Let the mix rest for one night at ambient temperature
If you see that the yeast does not look ready, wait for 2 or 3 more hours.

I hope it will be useful for you, friend.

They are fantastic I agree. Invented by a French chef too. I like these type of hybrids over here we have one called a Cruffin which was invented by a bakery in Manchester called Pollen (a Northern take on the king of sourdough's name Lionel Poilane). Poilane was one of those eccentric types who's meticulous attention to detail set him out from the rest. He also made piece's for Salvador Dali. If you're familiar with Dali's art I'm sure you'll be able to work out the one's Poilane made!
