You're from the mountains. I started in Ajaccio and traveled all over the island. Such beautiful diversity of terrain there. The air was so clean and fresh, and the food so delicious. And the people were kind and happy. I didn't want to leave. In fact, I cancelled the rest of my trip which included Italy to stay longer.

Can you give me a recipe for french bread and vogels bread. I know vogels is swedish, but still close enough..

What do you think of Julia Child? Do you guys put butter on everything?

In Page 1 or 2 there is the recipe of traditional bread. And I have never heard of VOGEL, my apologies.

I don't know Julia Child who is she? In my region we put olive oil "everywhere"

She was an American that learned how to cook in France, and brought many French recipes to America. She was part of a trio that wrote 'Mastering the Art of French Cooking'. She also did a cooking show in the 60's, called the French Chef.

If you visit South of France and you like good food, go to a restaurant called LA chèvre d'or, It is great.

You take old toast and soak it in egg. Then pan fry it in butter and serve with maple syrup..

Go on youtube and type PAIN PERDU, it's very easy it doesn't take a baker and you will looove it

Yes there is one in my city it's called LE DOLLI'S.

My nephew told me it's mainly eastern European girls, in France it represents bad quality girls, if you want hot girls, it's Italian girls!

Chocolate croissant = pain au chocolat

And to make a real pain au chocolat You need baker's chocolate, and by Bakers chocolate I mean dark chocolate, black chocolate.

And you need to be generous on the butter yes without abusing too, you don't want cholesterol like I have

34 years old and cholesterol and I have never ate at McDonald's....!

Let's be precise, to make 4 pains au chocolat you need 165 grams of butter. I hope it helps you

How did you become a baker? What would you tell someone just starting out as most important in having a successful bakery?

Also - did you mean your oven is wood-fired? Is there a way you inject moisture into it as the bread bakes? Or do you simply brush the tops with water?

It's the carbohydrates, not fat, that causes unhealthy cholesterol. I changed my diet to as much protein and fat as I wanted and my cholesterol and blood pressure dropped dramatically within a few months. I still eat starches, but not nearly as much as I used to.

What we sell the most is called "campaillette"
I became a baker because my father was a baker.
I would tell to someone who starts that if you make this job with passion, you don't have to worry about money.
With my oven I simply brush the tops with water, I have always done like this and no one complains or they would tell me (in France when you have an occasion to complain you use the occasion!).
