I know you are a baker but have you made a "French" omelette before? I followed Jacques Pepin's tutorial on youtube and it actually worked and was better than the "country" omelettes I made my whole life.

If you want to make an omelette that feels really lightweight in your mouth, you should add a tiny amount of beer, but I'm not sure how much precisely, I could find this for you if you are willing to test it! Making an omelette doesn't take a lot of time, it wouldn't be a waste of time.

No French stores but we do have some hi end gourmet stores. I might have to look further out. I'd be curious of a receive you might have for making some good live yeast for some soft and chewy pizza dough that has a unique depth of flavor. The traditional blocks of yeast are so cliche, and dry yeast is a joke.

Warm up your stove

Beat your eggs really fast from 3 to 5 minutes so it will be really light

Cats in my city are given fresh fishes by the fishermen at the Port EVERY MORNING, they are so picky that if you give them cat food they don't even smell it!

Recipe for homemade yeast

You need!

100 milliliters of pasteurized beer (pasteurized is really important)

1 teaspoon of sugar

1 tablespoon of flour

Pour the beer in a bowl
Add the sugar and the flour
Mix the ingredients with attention
Let the mix rest for one night at ambient temperature
If you see that the yeast does not look ready, wait for 2 or 3 more hours.

If you want a good city with a good night life and good clubs try Saint-Tropez, it's a beautiful place (but it is expensive there)

Marseille is Dangerous if you are a tourist, Local Arabs there will try to rob you and things like this.

I don't think that I am gluten intolerant, there is not really a food that makes me feel bad or sick. Except maybe harissa sauce if you know what it is.

They are fantastic I agree. Invented by a French chef too. I like these type of hybrids over here we have one called a Cruffin which was invented by a bakery in Manchester called Pollen (a Northern take on the king of sourdough's name Lionel Poilane). Poilane was one of those eccentric types who's meticulous attention to detail set him out from the rest. He also made piece's for Salvador Dali. If you're familiar with Dali's art I'm sure you'll be able to work out the one's Poilane made!
