I assume you mean peddle bikes? If so, yes. I had bikes nearly my whole life. For five years I have been bikeless :). When I was young a 50k ride was nothing. A few times we went about 125ks in a day--now that was something. At 64 years old I am in excellent shape and health. I suspect all that biking has some part in that.

I may get another bike soon, maybe a Christmas gift to myself. Of course, if I get one for myself I will need to buy one for my wife-even if she will use it once or twice a year.

Hello! Your post made me laugh because my wife is not really into bikes too what bike would you like to get for Christmas?

Just what bike I will end up with is a good question. I had used 10 speeds most of my life--had one for 15 years. Such a bike with narrow tires would not work well in the rural area that I retired to. Of course, the roads are paved but there are no shoulders.

I am thinking of something with medium width tires and maybe just f gears. I have mountains all around me but would not be prudent (LOL) for me to go riding in the high elevations. So, it would be most likely used just for short trips to my kids/grandkids homes--5 k and 15ks away. There is very little road traffic but it is there. At times I would have to ride in the dirt.

I have no idea of brands as I have looked in many years. It is almost comical but all my previous bikes were made in the USA except one (Raleigh). I don't think such a thing exists anymore.

Hello, I want to go for rides. You will have to take me out for a quick sightseeing run if you have an extra helmet.

Winter isn't the most ideal time though.

The pastry chef at my MoF's boulangerie has a Harley Davidson. He lives quite some distance away so he takes it out when the weather is dry. Much easier for him than taking his car and no need to pay for parking.

Boulogne Billancourt where the boulangeries are is quite bourgeois so no one is going to steal it while he parks it by the boulangerie.

I am going to spend a good part of the day there tomorrow. I am always happy when I am there. Best place to be. I'll steal chouquettes by the dozens and eat crèmes of all kinds.

Yes But I am corsican first. French people are too docile on many aspects, I disagree with a lot of these aspects.
I sell them bread and pastries in Cannes, they get my products, I get their money, this is enough.

Do you make everything by hand or do you have a machine to mix and kneed the bread dough?

Usually there is me, my nephew and an other apprentice who work, we all have the qualifications to knead ourselves, we knead by hand, like my grandfather and my father used to do.
It takes a lot of time, this is why we are at work at 3 o'clock in the morning every day. I could use a machine yes, but it's not the Idea I have of a baker. It is my personal opinion I respect Bakers who use machines.

From where in corsica, what city or village?

We make regional products, like the pissaladière etc..

Hello folks!!! 3 o'clock in the morning rendez-vous as always I hope you are all fine today!

Hello, yes I have a recipe for the cannelés but you are going to need baking pans to make them, otherwise it is not cannelés.

So your recipe for 16 cannelés

You will need :

50 centiliters of milk
2 eggs
2 egg yolks
Half a pod of vanilla (not chemical fuck this)
3 tablespoons of rhum
100 grams of flour
200 grams of sugar in powder
25 grams of butter

Here we go now!

Make your milk boil with your vanilla pod and your butter

On the other side mix the flour and the sugar and put your eggs (not the yolks) and then put your boiling milk

Mix all this slowly until you obtain a fluid liquid, let it become cool, then add the Rhum

Put this in the fridge for 24 hours

The next day take your liquid out of the fridge an hour before you start the next phase

Warm up your oven at 270 degree celsius

Pour your liquid in the baking pans, fill the baking pans not entirely, but at 90%. Cook them at 270 degree celsius for 5 minutes, then cook them at 180 degree celsius for at least an hour, the cannelé must have a brown crust and must be soft on the inside.

Take them out of the baking pans when they are still hot

How about a good sourdough baguette recipe? Is it possible?

I have a great starter..since 1984 and it makes delicious regular bread with a nice chewy crust but I haven't the slightest clue how to do a baguette.

There is a recipe for a traditional bread in this thread. If you want a baguette instead, all you have to do is change the shape of the dough before putting it in your oven and take it out of the oven when it has a golden color.
