As to the whole "when flying in a plane, do you feel the nose dip every so often to keep the plane level with the round ball earth?" question:
Planes don't need to correct for the curvature of the earth. Planes fly primarily by barometric altitude, which is the altitude (corrected for current barometric pressure) as related to MSL (mean sea level). So if I am flying a plane at 5,000', all I have to do is keep the altimeter at that altitude to ensure that I am 5,000' above MSL.
In most jets the autopilot does this flawlessly all the time.
