That sounds good! We used to fry it, c cutting slices in the edges so it didn't ball up. Went great with eggs., Duh, what you just said! Lol

We used to make something called flying saucers at the nursing home I used to work at. It's really simple and surprisingly filling!
Put parchment paper on a cookie sheet, lay out the number of slices of bologna that you want.
Heat your oven to 350 degrees.
While you're waiting for the oven to preheat, make up an equal amount of instant mashed potatoes at about 1/2 to 3/4 cup per slice. I know, but real potatoes don't work as well for some reason. If you do use leftover real tater's, thin them down some.
Put a scoop of potatoes on each slice of bologna and bake until the bologna curls up like a bowl. Put a slice of cheese on that and put back in the oven until melted.
Really good in the winter! I can never eat more than 2.
I know it sounds weird, but it's surprisingly good. We always had it with broccoli or California blend.
We used to make them with cooked hamburger patties for the ones that couldn't have bologna. I've never had them that way, but the residents loved them. We used to feed staff as well and almost everyone ate on those days.
