Nice job!
That kind of cheese can be used like ricotta to stuff pasta shells or make lasagna or even cheesecake. You can press it longer and make paneer, which can be cut into cubes and used a little like tofu but in Indian cooking.

Adding the garlic and pepper...or chives..or parsley and scallions...or any of a thousand wonderful combinations can make it really interesting as a spread with crackers or bread too. Dried cranberries and a little orange peel is nice for a sweet desert!

But maybe you know all that part already!

You can put herbs and such in the cheese just after draining before you squeeze too... I never made goat cheese but I have made similar cheeses with cows milk and soy milk and nut milk.

yes, I would suggest at least a gal of milk, and get some "renet" at your grocery store - one tablet per gal in warm milk... it has no taste (like your lemon) and it works better

I never heated my milk, just let it sit covered in the sun for a few hours. I was told 90 degrees is plenty hot enough to form curds ... they should look like soggy cottage cheese (because that is what it is) before you start straining it .... and that's when you have to hide it from the kids LOL ... or make it when they are at school

so then you strain it, twisting the cheese cloth as tight as you can... let it drip for a couple of days and keep twisting it - then when it is "dry" dip it in sealing wax and let it sit un covered on the shelf in the pantry, for a month ... and you will have a "firm cheese" instead of a "soft" cheese (which is best for cheesecake ) the soft cheese freezes well ... the hard cheese can be aged for years once it is sealed in the wax

and yeah, you can season it before you squeeze it ... even add some grated cheese to make it "cheddar" or mozzarella or even parmesan - even made blue-cheese once

most of my cheese was eaten in the cottage cheese form LOL - nothing better than fresh cottage cheese ... like fresh buttermilk, it's nothing like you buy in the store ... and well worth the effort - even if you don't have goats, you can use organic (grass fed) milk ... and make the best yogurt, cream cheese, cottage cheese you will ever eat - right at home

Eating the wrong kind of goat cheese. Try Bleu which is the best cheese out there.

I never knew goats produced so much milk. Goats produce 3-4 qts per day during the 10 month lactation.
