The first council of the Catholic church was in 325 in Nicea and one of the things they did was pick out what would be in what we call the New Testament so we were all on the same page as people all just went in and copied this or that, they wanted one concise statement of what Jesus said...therein was also a plethora of letters from the apostles and letters of those who witnessed the "trial" of Peter and what he said.
