Back in 1989 I went down to New Orleans with some friends. One friend of mine had a buddy who lived in New Orleans. His buddy had been waiter up in Ohio, and he had started working on River boats as a waiter, travelling up and down the Inland water ways, and eventually he vibed with NO and made his home there.

He wound up being the mai^tre d at one of the best restaurants in town at the time...The Commanders Palace. As such, he was a little bit of a puff and snob. In the morning, when he made the coffee, he insisted that he had to 'hand-grind' the beans. No grinding machine for him.

I never thought much about it before that.

But of course, after that came Starbucks (exactly designed for his type of hipster mentality). So, when I was a traveling businessman fifteen years later in the software industry, I often started the morning meeting at a Starbucks or a local coffee shop in different towns, and I became more and more aware of the difference in coffee beans around the world. My travels took me as far as Brazil, where the Brazilians are very proud of their beans.

Luckily today, as a consumer in the world's greatest consumer society, I have a wide range of coffee options. I enjoy Seattle's Best 8th Avenue blend. I am a big fan of Sumatran Coffee. I don't mind the slightly more aggressive Kenyan or Guatemalan bean with their bitter edginess.

If you are a true connoisseur of java, please share your opinions, I'm always looking for a new blend to try.

I'm a coffee fool. I only hand grind and french press. I'm not up on the different beans, but I have been drinking Kicking Horse Kick Ass coffee for about 2 years now. It's pretty heavy/rich, a bit of bitterness balanced with some sweetness.

The grind isn't completely uniform, and there are very few tiny particles in it. I like that in the french press. Honestly, it's probably just a personal preference that doesn't effect the flavor much, it's become a morning ritual though. And I like the idea that I can enjoy my coffee even if the power gets knocked out in the winter.

This upped my coffee game

After a couple times I have it down solid. The guy that invented this also invented the frisbee. Gives me a cup now that I had hoped to get when I bought a french press.

They do a world championship each year and post the recipes. Nowadays, the winners are using 30-35 grams of coffee! I am good from 18-25.

If you do use a mechanical grinder, it must be a burr grinder - not those silly blade grinders.

I use a Cuisinart Burr Grind & Brew. It's a very good machine for every day coffee.

Of course, good beans are a must. I like Starbucks Espresso beans. Yes, Espresso beans for coffee. I also use half the water. Set the grind on the machine for 12 cups, but only fill the water to the 6 cup mark. I also use the "strong" setting as it drips the water through the basket at slower rate, extracting more of the oil from the freshly ground beans.

This makes a much better cup than you can buy in a Starbucks store. Really!

I used to care a lot more about the preparation, haven't used my pour-over in a month or two.

Brown filter gang here.

Any light roast will do.

Pre-ground is fine for me.

Boiled water from ol' trusty pot that I use for cooking.

I've been using the microwave a lot more recently, cause fuck it, y'know? Cup of water and instant coffee crystals. Takes 2 minutes tops, every day.

Any powered grinder will put some heat into the coffee and drive off a tiny bit of the lighter aroma.

IF you were trying to achieve the ultimate, grinding it slower by hand might make a little sense.

If you are a coffee connoisseur you don't buy prepackaged beans.

Either find a local roaster or roast your own. I do mine in a hot air popcorn machine but you can buy roaster for a couple hundred bucks.

There is a saying "15,15,15". Raw beans not older than 15 months, roasted beans not older than 15 days and brewed coffee not older than 15 minutes.
