Use Zinc in chelated form (like Zinc glycinate) for better absorption.
I take 25mg daily with food when I'm feeling well.
I increase that to 25mg x 2 times per day with food if I feel like I'm starting to catch a cold
I increase that to 25mg x 3 times per day if I actually am sick.

You should also take copper if you're using zinc because the two compete in your body. Taking zinc without copper may lead to a copper deficiency and vice versa.
I take 2.5 mg of chelated copper once per day AT LEAST 2 HOURS APART from when I took zinc.
If I'm feeling like I'm starting a cold or getting sick, I take 2 x 2.5mg of chelated copper, again 2 hours apart from the zinc.
If I'm full blown sick, I take 3 x 2.5 mg of chelated copper, again 2 hours apart from the zinc.
