La Cumbre Vieja Mojito Recipe In Honor Of GLP user VQC in La Palma

One of our own is reporting from the Island of La Palma where all hell is about to break loose with the Cumbre Vieja volcano.

In honor of him I will post my Mojito recipe.

Ingredients:

Fresh Mint
One satchet of white sugar
The liquid of a small fresh Lime (Green Lima, NOT Lemon)
White rum
Crushed Ice
Touch of Casera (use 7up if you cannot get it)
Drinking straw


Use a large pint glass
Squeeze out the Lime into the glass - you should have half a finger no more.
Add the sugar and swirl the glass a little
Add 5 leaves of fresh mint - no stems
Swirl the glass again to get the leaves wet
Add 5 seconds of Rum (= 1.5 shot glass)
Take a small spoon and stir without breaking the leaves
Stir until all sugar has dissolved (check by looking at the bottom) May take up to 2 minutes
Add crushed ice and fill to the rim
Add a touch of Casera until glass full
Take two fresh mint stalks without the roots - ideally the same length as the glass
Activate the mint by gently slapping the mint against your hand in a one-two motion - do not crush
Place the stalks in the glass using the spoon to submerge - one on the left side one on the right
Add straw on the side and gently stir around 3 or 4 times
Try to grab some of the bottom leaves and pull them up to the middle of the glass

Enjoy.

Refill:
Use a second Pint glass and dump the left over contents in the second glass. Fish out the two stalks.
Use a few new leaves and proceed as before. Dump back the ice and top it up with fresh ice.
Follow recipe as before - the two stalks may be reused for flavor and decoration.

Second refill: you will not care and do as you please.
