G, your menu sounds good, except for the mashed potatoes which is my favorite comfort food.
Homemade is so worth the minor extra effort.
For one person, just a large baking potato will suffice.
Just peel the skin, chop into cubes and boil for about 15 minutes until fork soft/tender.
Mash and mix with melted butter, maybe a little warm milk, salt and pepper. Add sour cream, bacon bits, cheese, anything that appeals to you.
Quoting: Avenger1 why do people keep saying how easy it to make mashed potatoes...but then have a giant list of all the shit you have to go through to make them... ...and then after all that work, I have to hope I did it right. Or: $4 Bob Evans....Nuke and done.
