In HPP, packaged foods including meats are subjected to very high pressures to destroy pathogens and spoilage microorganisms while maintaining sensory attributes and nutritional quality. I don't eat beef but I do eat pork and I uncovered something a few years back about it that seems to have been wiped from the internet. I've eaten all kinds of commercial pork my whole life and I know all the cuts and how they tasted.... or at least I thought I knew.... Short story: A friend of my husband owned some pigs on his farm. We were helping an older guy out and he had 2 illegals working on his property and they were very hungry, to the point they were trying to catch blackbirds to eat. Not good right? Yuck So My husband and I decided to call the pig owner guy and request a small swine to butcher and feed everyone with. The pig owner agreed. We went to his farm and shot a 45-pound pig and brought it back to the old guy's property. Those Illegals went right to work on butchering that pig, barely giving it anytime to bleed out. They had a huge cast-iron skillet over a campfire and just chunked in as much cubed pig as possible. We ate fine that evening. Only thing was, as a pig connisuer I must tell you that I had never in my life tasted pig like that, it really did't even taste like any pork I had ever had. It was unbelievable! Tasted like heaven. Didn't taste like what I have always known as pork. ANyways, after searching as to why I had never tasted pork like that, I had stumbled onto an article that said a fresh kill pork is in the industry referred to as "Green Pork" and it is never sold to consumers like that. I want more but no place to find. :( |
