My favorite counter is to: Step into the kick blocking and covering the head. Grab the leg. Push the leg into the air while sweeping the attackers other leg. In a case like the above, try to make the attacker land on their head causing injury. It's called a spinning rear roundhouse kick, depending on what style you learn.
