Why is it everytime I have to use tomato paste it only calls for a tablespoon or so?
What do I do with the rest of it?
Should I freeze or just put the whole can in - screw it!

I freeze the rest. Do not put the whole can of paste in what you are making. That would be too much acid from the paste.

You can freeze the rest. Use an ice cube tray and freeze it in 1 tablespoon sized portions and then store them all together in a ziplock bag. Then when you need a tablespoon you can pop one cube into your recipe.

They also sell tubes of paste that you can take what you need and then screw the cap back on, but they are more expensive than buying the cans and freezing the leftovers.

No, it's just me, Mike. The first time I made spaghetti was 1969 when I was living in an apartment in Honolulu(which was a hell of a lot better than trudging through the jungles VietNam). I thought it was delicious. Now I use some lowry's spaghetti seasoning and 1 can of hunts paste and 3 cans of water. render down some black olives with the ground beef (for my son) and there it is. One of my roommates from the Navy(Honolulu) claimed he had dated Brenda Lee, but I never believed him. He also claimed that he had a 426 Mustang. Custom install by the Ford dealer for him. Didn't believe that either.(memories triggered)

Tomato paste is a lot more concentrated than tomato sauce so you need less of it. The paste also has reduced water content.
A little goes a long way. It's ok to freeze what you don't use. If the recipe does not call for a whole can then don't use a whole can.

Anyway I used to make a really good meat sauce but it was several steps and I'm not sure I remember it. Your friend might have been telling the truth about the mustang though, were they all custom installs? The camaro SS was custom from the dealership also around the same time.(memories triggered)
