Re: Random recipe questions
Sprinkle a little coffee into the sauce... it adds mysterious depth.
 Quoting: Viktor Vaughn

That really sounds insane. Like when I put some brandy in my cookie dough and cake batter.
 Quoting: Anonymous Coward 80844310

Don't knock it... A little sprinkle and it seriously elevates the flavor

That's not what I meant, it seems like someone else wrote it for you and this one too.
 Quoting: ^Mike

No, it's just me, Mike. The first time I made spaghetti was 1969 when I was living in an apartment in Honolulu(which was a hell of a lot better than trudging through the jungles VietNam). I thought it was delicious. Now I use some lowry's spaghetti seasoning and 1 can of hunts paste and 3 cans of water. render down some black olives with the ground beef (for my son) and there it is. One of my roommates from the Navy(Honolulu) claimed he had dated Brenda Lee, but I never believed him. He also claimed that he had a 426 Mustang. Custom install by the Ford dealer for him. Didn't believe that either.
 Quoting: Pilgrim001

I don't know what it is but something is very weird about your responses to me. I had to read this over like 5 times to understand what you were saying reading it feels like having a stroke.

Anyway I used to make a really good meat sauce but it was several steps and I'm not sure I remember it. Your friend might have been telling the truth about the mustang though, were they all custom installs? The camaro SS was custom from the dealership also around the same time.(memories triggered)
 Quoting: ^Mike

He claimed the date with Brenda Lee was family arranged and they were about 13-14. He said his family was connected with
Honest Charlie in some way.
I love Brenda lee.
 Quoting: Pilgrim001

I had to look her up, she looks like a very nice lady. But I've talked to you before and I don't remember you being so eclectic. Are you high or did you just win the lottery?

Re: Random recipe questions
Buy a big can of it. Put the leftover paste in an ice cube tray that has cubes about 1 tbsp. Take frozen cubes out and put in a ziplock in freezer.

Please list the ingredients. I would probably leave it out, or use a small can of tomato sauce instead.

Or plan on pizza tomorrow.
 Quoting: Pilgrim001

Something's wrong with your post hmm
 Quoting: ^Mike

What? If I could see his ingred. list, I might have suggestions. sauce, paste, juice, chopped, whole tomatoes
are all interchangeable to some degree.
I might use the LEFTOVER paste as the base for a pizza tomorrow.
So what is wrong? I can't imagine the recipe that only calls for 1 tbsp of tom. paste. WTF?
I usually only use a recipe as a starting point and add or subtract as I see fit.
 Quoting: Pilgrim001

so, here is the recipe I went with - as a guide anyway, but wasn't sure about the paste? Added more than they said, but don't know if it mattered.

[link to cooking.nytimes.com (secure)]

Anyway, added bread crumbs to thicken it up and it turned out ok.
Seemed to work for the recipients :)
 Quoting: south of eden

If you had made the whole pot of sauce from fresh tomatoes, I wouldn't have added tomato paste to it. Just simmer it down to the desired consistancy. I probably would have used GP flour or corn starch to thicken it if I was tired of simmering it and wanted it thicker.
There must be hundreds of ways to make Marinara so just be inventive about it. In the Philippines, we had catsup (ketchup) made from bananas, so you can see there is a lot of room for invention in whatever you do or make. Maybe that's why I like to cook, but I never make anything the same way twice.

Yes. I am Eclectic. I'm old. I've been around the world. Done a lot of things. My "problem" is that I want to share all my knowledge with the world, and most people just don't give a fuck. Something that I did 40 years ago just doesn't seem relevant, because they don't realize how fast time really flies.
Take the Brenda Lee Challenge. Crack open a bottle of vodka or whiskey or bourbon. drink about 1/2 the bottle(or whatever is safe for you) while listening to a dozen or so Brenda lee songs, and see if you are a Brenda Lee fan.

Some people put in a tsp of cocoa. You just want a hint of flavor and not to overwhelm.

I put about 1./4 cup of vodka in some batter for chicken last week and it worked pretty good. Nice and crispy.
