We jumped again.
It has always been: cook chicken breasts at 400 degrees F for 1 hour in the oven...

Always.

Now all the recipes on the internet say 18 - 20 minutes.

We jumped or slid.

Re: We jumped again.
New ovens come up to temp faster and hold temps more stable, making cooking overall safer, so you can cut time without shitting out your liver 6 hours later.

Maybe.

Your mouth would get cut up from dry chicken if you did an hour at 400
We didn't jump, you're just a shitty cook

This is kinda what I thought. Never in my life had to bake a chicken breast more than 35 minutes and have only had food poisoning once (and it wasn't from chicken, but deviled eggs, 50 years ago).
More deplorable all the time.

Re: We jumped again.
You can bake a whole chicken in the oven in one hour Chicken breasts take much less time. I think you’re just not remembering correctly.

Re: We jumped again.
I usually do an internal temp check on chicken for 165 F and cooking time can vary but temperature never lies. I just don't like over-cooked chicken that can draw out all the moisture.

Get a wireless thermometer and never guess again

Here are some examples that work with a cell phone / bluetooth:

Weber iGrill 3

MEATER

----

Works well for oven baked, grilled, smoked, etc...

Boneless/skinless chicken breasts are tasty when cooked at around
280-300 F, for however long it takes to get to 160 F.

If you have skin on chicken, you may want to cook at 400 F. That
way the skin gets crispy. Make sure the skin is absolutely dry before
baking though.

Re: We jumped again.
Of course you CAN bake a chicken breast for approx an hour, even longer.

But SHOULD you?

Will it be tasty ?

Of course not.
