How the hell do you deal with this? I made a purchase and I asked the salesperson how much it would be and I told him it was less than I expected. He replied well you can give me a $20 tip(which was 20%). He was completely serious. Even though I knew I would never shop there again I still gave him the tip($10 instead of $20). If I gave him $20 It would have eaten at me a lot more than this.

Last time I was in Oregon I had to argue with the attendant about not tipping him. When daddy.gov makes a service like pumping gas mandatory, then I don't tip. It isn't like I pulled into a "full serve" gas station.

That also requires developing a useful skillset beyond carrying plates from a kitchen.

They all hand you this touchless payment device and you cannot continue unless you either add a tip or DENY tip...as the person behind the counter looks at you.
