I was born and raised in the South, that statement is largely true.

The food is better in the South because it's based on Mexican and Creole cuisine.

Most southern people never saw a Mexican until the 1990s or later. Even Texas didn't have many of them past south Texas or west Texas in towns very close to or bordering the border until the 1980s as a trickle became a flood. There were "Mexican" restaurants in places outside close border towns- but it was "Tex-Mex"- mostly owned by Whites who just put their own spin on what they considered Mexican food. Creole food was a Louisiana thing and maybe some into Mississippi.

Of course there are a lot of "southern" US foods that were cooked from scratch- including desserts.

Yes, why didn't they take them up north or give them homesteading land in the west after the Civil War instead of leaving them in the "racist south".
