Think of the currents as having 'heat pumps' - at the tropics the ocean is warmed, the ocean moves to the cooler poles where colder water from polar melt and the natural tendency of water to radiate heat causes the water to evaporate quicker, leaving behind the salts making the water 'heavier' to where it will sink, the sinking water has to go somewhere - it heads back to where water is being 'pumped up' by heat at the equator - nature abhors a vacuum. Heat the poles and the cooling slows down the 'in fall' of cold water slows down all of that heated water behind is trying to go somewhere so the current 'shifts' to find a new sinking point where water will cool and sink.
