even then, i'd just wait.....as crumbled tofu is a better substitute for ricotta than cottage cheese.

quark is so much better than cottage cheese.

Breakfast idea:

Crack an egg,mix with cottahe cheese add some flour, vanilla extract, some sugar.
Form patties, fry in pan in any oil.
Serve with sour cream on top (optional) or sweet fruit jam or preserves.

An acquired taste...hated it as a kid, then in college ate some full fat, large curd cottage cheese and love it now. Hard to find large curd anywhere though.

It's a lot like Ricotta Cheese. When I make lasagna I mix cottage cheese with ricotta cheese for one of the layers. You can not taste the difference.
I also like cottage cheese in my salad.
It's great with pineapple too.

Beware of casein.

Once the milk is heaten the proteins get denatured and the casein being a long chain protein meant to feed the animal for longer hours, become undigestible.

Denaturated Casein if not further processed to be hydrolyzed becomes like a high resistance glue.

Think about it, they used to make polymer clothing out of milk.

It takes 4/5 years for some few variety of cheese aa gouda, parmisan and cheddar to break down the casein
