Yes, But they are as different as car models... to use one most creatively you simply must work with it and learn its sensitivities. Only basic fundamentals apply from unit to unit. Have your tried the Tech Support line for your particular model?

Guitars are not usually plugged into a balanced input tho you can if you set the gain control right so that no clipping occurs.

You get a better sound tho if you put it through a guitar amp and take it up with a mic placed directly at the front of the speaker.
Or use a guitar amp modeling software and play over your PC.

Actually I'm mic'ing my guitar amp, I need to put some bass guitar tracks and I don't have a bass amp so I was thinking of plugging my bass right into the mixer.

It will work fine. If you are playing a pre-amped acoustic or an electric with any pedal effects you will have to keep the gain low or it will distort the board pre-amp.
