The story is that they are used in churches to ward off evil spirits (and to divert water). There is a story of a French saint defeating the gargoyle and then sticking its head on the church in victory. But they go back to ancient Egypt. Can't tell you what they meant in that context, but that's probably the more relevant context. Everything these jokers do seems to go back to Egypt.
