Somewhere in the Old Testament it talks about God loving Jacob and hating his twin brother Esau...

That is referenced in Romans 9...and Romans 9 is where the election bomb is dropped.

We are all his creations...but not all his children. We become his children by believing in Jesus Christ. We believe in Jesus Christ by grace, through faith...and that is a gift from God.

Romans 9:4-8 Paul says about his kinsmen according to the flesh:

(7)Neither are all they that are the seed of Abraham, children: but in Isaac shall thy seed be called.

(8)That is to say, but they that are children of the flesh are the children of God, but they that are children of the promise are accounted for the seed.

That promise was Christ.

God is no respecter of persons. If you sin against Him, makes no difference who you are, king or pauper.

He's been incentivizing us with position and not just the simple, basic things in life for a long time now. While making sure no position will ever be more elevated than the one reserved for his son.

Was letting Adam's loyalty be tested while not having a son of his own perfectly just?

There's the saved who are adoptive sons of God and there's the lost that are just creatures in the creation, not yet sons and most of them won't be because they don't want to and God ain't going to force them.
