Anyway, in my opinion, the Khazars were infiltrated by Jews and that's why they converted.

Since they have started to be "known" for their ways, they needed a new "disguise", so they infiltrated the Khazars and persuaded them to convert to Judaism. This way they would be able to say that they are actually not descendants of Shem, but of Japhet.
