The reason for choosing these plants (I would add garlic, beets and chives) is because they can all deal with being topped by machinery and no one barely knows what they look like. It is what is underground that counts. Make a map of where you have planted these things.

Now your harvest is not going to be huge but once the initial outlay for the tubers is done, it is a self-perpetuating system.
