Place on a rack on a cookie sheet and place in oven at 275 until the meat is 123-125 degrees. Maybe 20 minutes. Take out. Heat a cast iron skillet and put butter and garlic on it. Then the steak for about 1 minute a side to get it nice and crisp on the outside. That's it. Comes out perfect every time. To learn who rules over you, find out who you are not allowed to criticize. So i have to keep them longer, and pour the grain... used to do angus,, until a buddy fed me some charlet. |
