Let's grill the perfect steak
For a charcoal grill I use the 5 minute rule (1" min. thick) for medium well.

After all the bricks are white and completely cover the grill bottom at least 2 deep I season the grill rungs with a piece of fat to keep the steaks from sticking.

When you reach max heat throw the steaks on add the lid and choke off all the air to the coal top/bottom vents and leave for 5 minutes. DONT PEEK.

Flip the steaks and open only the bottom vent and leave for 5 minutes. Don't peek.
Garlic salt and black pepper are the only spices I use.



For pork ribs, try soaking them in "Italian Salad dressing" and basting them with the dressing's "solids" for a great dry-rub.

there is such a thing as a stove top smoker. they smoke your
place up like burning inscense, so it's not overwhelming.

i've smoked porch chops with them, and they are pretty tasty.

My best way is this:

drizzle/spread olive oil all over steak then salt and pepper.

Place on a rack on a cookie sheet and place in oven at 275 until the meat is 123-125 degrees. Maybe 20 minutes.

Take out.

Heat a cast iron skillet and put butter and garlic on it.

Then the steak for about 1 minute a side to get it nice and crisp on the outside.

That's it. Comes out perfect every time.

Yes... charlet have a terrible feed conversion. So i have to keep them longer, and pour the grain... used to do angus,, until a buddy fed me some charlet.
