White chicken burritos

2-3 chicken breasts
3 cloved garlic, minced
1 pkg taco seasoning or southwest seasoning of your choice
1 c. chicken broth
1 can white beans, drained
1 can diced green chilies
3 green onions, sliced, green parts set aside
2 c. shredded cheese, Mexican, colby jack, or pepperjack depending on how spicy you like it
2 Tbsp butter
2 Tbsp flour
1 tsp cumin
1/2 tsp ground chipotle (optional)
1 c. milk
1/2 c. sour cream
8 large tortillas

More sour cream and salsa for garnish, avocado if you like

Season the chicken breasts with southwest seasoning or packet of taco seasoning and add to instant pot with 1 c. chicken broth and 3 cloves of garlic.

I cooked the chicken in the instant pot for 16 minutes and let it come to normal pressure naturally, but you could just simmer it on the stove a little longer, until it is tender and shreds easily.

Remove chicken breasts to a large bowl and reserve broth. Shred chicken and add the white beans, diced green chilies, white parts of green onions, and about 1 c. of the cheese.

In a sauce pan, melt the butter, whisk in the flour and slowly whisk in the milk and the reserved broth and bring to a simmer. Stir in cumin and chipotle if you are using it. When it begins to thicken, remove from heat and whisk in the 1/2 c. sour cream and 1/2 c. of the cheese.

Add about a half cup of the sauce to the chicken/bean/cheese mixture and stir well.

I like to grease a 9 x 13 pan and preheat the oven to 350. I put about a third of the sauce on the bottom of the pan and then roll up a good sized scoop of filling in each tortilla and place it in the pan, seam side down. I pour the rest of the sauce over the top and sprinkle with the remaining 1/2 c. of cheese and then put in the oven for about 25 minutes.

Remove from oven and sprinkle remaining sliced green onion tops over the casserole and serve with sour cream and salsa and/or avocado, etc.

Sometimes I through sweet corn in the filling or more peppers, depending what is in the fridge.

That makes sense for work lunches. I always preferred leftovers not to mention cheaper than sandwiches.

I remember planning out every meal and tweaking it till we could afford it. We lived a lot leg quarters and rice.

Yeah it is her account I could see by the karma on my page that I'd given her that said Account Deleted by User. But you go there and the weird thing is that is says she was friend to Three people! Three! Hundreds of people that had her on their friend list. The three people listed as the only ones who had her on friend list are rewind, ironangel, and LittleMe.

That's pretty bizarre isn't it?

She had the account for sixteen years.

What a bummer. Pool if your account was somehow hacked into get a message out to have it sorted. This has happened before.

Tonite was comfort food - tater tot casserole and green beans sauteed with shallots and rosemary. I stupidly bought rosemary at the store and I swear they gave me some kind of fir needles instead. Whatever species it is, not planting it. blech.

I wish our dear Pool all the best. I do agree that it's strange showing those particular 3 friends...which is really 2 friends. Who knows, maybe 1.

We had a delightful dinner of 2 leftover (frozen) pasta sauces mingled together on spag. My crowning achievement as a cook...lol...it was perfect for the day though. We do our 'super shop' tomorrow...so many points...
