Again, this is a problem in some cases and a benefit in others. Vegetarians who eat soy constantly can suffer from mineral malnutrition. But Japanese who survived the nuclear bomb attacks, who ate soy daily, suffered less radiation poisoning and cancer. It's thought that the phytates in soy helped prevent the absorption of the radioactive materials in their gut. So the phytates can deplete minerals but prevent toxin uptake as well. Also, the way soy beans are soaked, processed, makes a difference in how many soy toxins make their way into the final product. Asians don't eat/drink soy in the large quantities being promoted by some Americans. Americans who think they can live off soy and soy derivatives to be vegetarians have been suckered into trying to get a lot of their protein from a food that should be eaten in small amounts. I think some studies have shown that Asians average about 9 grams of soy products a day. That's like 1/3 of an ounce, a very small amount. I either use raw cow's milk (more info [link to www.westonaprice.org] or rice milk. You have to be careful what kind of rice milk you buy. Many of them now contain canola oil. I don't know why, but the 32 oz. containers of Rice Dream's Rice Milk contains canola oil, but the half gallon size does not. Also, there is only one type of soy that is fit for human consumption and that is fermented soy. [link to www.westonaprice.org] |
