They are illegal. Not only that, you told them they needed to sign the paper to keep their job. This was not a requirement when you hired them. There is no gain for them agreeing to sign the non-compete and therefore the contract is null and void, legally. You can not prevent someone from doing business in their trained profession. This is a Supreme Court decision. You as an employer are an a$$hole. You can not prevent competition by attempting to prevent your employees from doing what they are trained to do.
