You can eat the leaves when they are young, we've tried it - it reminded me of spinach.

You can make jelly from the root, but we haven't tried that.

Wood sorrel, chickweed.

Two kinds. one has white flowers, one has yellow flowers. Both are edible, but the yellow one has no taste. You should do your own research, because I do not know what grows in the Netherlands.

Lamb's quarters - that's pretty good.

Better not try eating "all" the weeds in your yard though there are many edible species.

plantain, dandelion and chickweed are the most common edible weeds here in the Eastern US. Eating large amounts of clover or sorrel can cause kidney damage.

One wrong plant ID can kill you so be sure you know what you're eating folks. I've been teaching this stuff for years.

Kudzu root is suppose to cure hangovers too, but I have never tried it.

Poke is only edible when it's very, very young and has not turned red. After that it becomes poisonous. The raw fruit is as well unless dried first.

Edible wild plants is the domain of dangerous information. Research it for yourself and take nobody's word for anything!

Very good point. Only eat it if you KNOW for sure. If in doubt, do not put it in your mouth.

Yeah don't eat unidentified plants, I got really sick once from eating an unidentified plant. It ended my attempt at leaving humanity. Sick, dizzy, week confused with mild hallucinations. Sick for two weeks.

Smell the root. Hemlock smells nothing like carrot, but does look similar. If it does not have a very, very strong carrot smell you could end up like Socrates.

I absolutely love when spring rolls around and dandelions begin popping up everywhere.

I pop the flower and clean all the green off of it, dip it in pancake batter, fry them up and put butter and syrup on them.

Nope, any of 'em. But they are small and it takes of lot of picking and the wild ones are not particularly flavorful.

You can also roast the root of Chickory to use as a coffee substitute

Mullein and Poke Week too. Poke Week is delicious and Mullein is wonderful if you have asthma or bronchitis as a remedy.

I have eaten Poke Weed. Pick it in the early spring when the leaves are small and rinse and rinse and rinse.
