Venison Bacon Burgers 2lbs ground venison 6 slices bacon 2tbsp olive oil 2 shallots - minced 1 tbsp Worcestershire sauce 1 tbsp chopped fresh parsley 1 tsp minced garlic 1 egg - beaten salt and pepper to taste Cook bacon till crispy Pour bacon grease into bowl and cool. Heat olive oil and saute garlic and shallots until soft. Mince bacon and mix into venison. Add worces. sauce, parsley, salt, pepper, bacon grease and egg to venison and mix till evenly combined. Refrigerate for at least 20 minutes - 2 hours is preferred. Separate into patty size rounds and grill. 2 lbs ground venison w/beef trimming 2 tbs rosemary ground 1/2 chopped onion 1/2 bell pepper chopped small 1 tsp Tony chacheres creole seasoning Grill over charcoal top with cheese My mouth is watering just thinking about it. Then, instead of mixing pork or beef fat with ground venison, add 8-10% bacon. I use the cheapest bacon available. Tacos, spaghetti, chili... It is great. |

This year I had to make my meat into burger. So I add my jerky seasoning to my burgers. LOL PS. This year the deer are full of ticks. I mean thousands. Be careful. The ground was crawling at me with ticks as I was cleaning and I was constantly killing them off me. Wear white so you can see them on you. It was so bad I would not keep the hide. I have never seen anything like that before. |

By that I mean the number of ticks seems to be getting higher every year but still not that bad. |
