The BEST!! Also love to cook zucchini in olive oil and add a bit of garlic, touch of salt and pepper...could eat a huge plate of just this. Sometimes I also cook up spinach, zuke, eggplant with olive oil and ricotta cheese plus a bit of garlic and chopped tomatoes. I cook this and then sprinkle parmesan on for the last 15 min or so...divine! :) |
