I like to slice a bunch of mushrooms semi-fine and saute in just a square of butter til brown. The BEST!!

Also love to cook zucchini in olive oil and add a bit of garlic, touch of salt and pepper...could eat a huge plate of just this.

Sometimes I also cook up spinach, zuke, eggplant with olive oil and ricotta cheese plus a bit of garlic and chopped tomatoes. I cook this and then sprinkle parmesan on for the last 15 min or so...divine!

absolutely!! :) right on both counts. I'm a shoephile, but I like ideas more.

I bought a so called pre-washed bag of spinach. I still check it and wash it. As I was turning a leaf around, I saw a dried, crushed, maggot. I never ate spinach since.

yeah there was a story a few years ago that said to wash the "pre-washed" bags bc studies showed they still had rat feces on them.

Good choices. I'd choose some Spanish White or chardonnay, whites like the Alvariño from Galicia or Verdejo (Young-Green-like White) from Castilla... Well, if the sauce is really heavy, some good Red one, from Rioja or Navarra...

I love chardonnay. I have heard great things about the Castilla wine but I not have not had any. You really should try some Viognier white if you can find it
