Turkey Bacon Potato Salad


1 pound (3 medium) potatoes
6 slices turkey bacon, diced
1 medium-size onion, diced
1/2 cup vinegar
1/2 cup stock or bouillon
1 tsp. salt
1/4 tsp. pepper
1 tsp. sugar
1 egg yolk, beaten

Scrub potatoes; rinse. Boil in jackets; let cool. Peel and cut in 1/4-inch slices. Cook bacon in hot pan until crisp. Add onion; stir and cook until transparent. Add vinegar, stock or bouillon, and seasonings. Stir; let come to a boil. Stir in egg; remove from heat and pour over potatoes.

Just kidding, not one of those threads. Just wanted to make the point that you can eat filling foods and still keep it low cal.
It wasn't raw spinach, btw, I sauteed some garlic in coconut oil then steamed it in the pan with a lid on.

What's your favorite quick, nutritious meal?

Here ya go. This is as ghetto as it gets. Reaper's Stove Top Slop.

Stovetop Slop (Ghetto Chili Cheeseburger Macaroni)

1 pound ground beef
2 Boxes of Kraft Mac N Cheese (2x 5oz boxes)
2 cans (10 3/4 ounces) condensed tomato Soup
2 cups water
1 pk of Taco seasoning
salt
pepper
Parmesan Cheese

Instructions:

Cook the beef in a 12 inch skillet over medium heat until well browned and then drain fat.

Stir the soup, water, mac n cheese and taco seasoning in the skillet and heat to a boil. Reduce the heat to medium. Cook for 12 minutes or until the noodles are tender, stirring often. Slop will thicken as it cools. Salt and pepper to taste. Before serving top with Parmesan cheese.

I bought a so called pre-washed bag of spinach. I still check it and wash it. As I was turning a leaf around, I saw a dried, crushed, maggot. I never ate spinach since.

They don't sell kale chips around here. You have to go to Harris Teeter to get the high end items. I just came back from Wally World and guess what? Twinkies are up on the displays with the cupcakes and yeah, they're back in business. I bought a bag of Nature's Harvest veggie crunchers. It's got sweet potatoes, squash, carrots, taro and green beans roasted in canola oil and sea salt. I wonder if they're any good.

Had to get some WD-40 and pack of paper for my printer.

Just tried crunchers and they're not bad. I wouldn't want to live on it, though.

I love watermelon, bug free. Especially on hot summer days. Only problem is it makes me pee so much after. I'll have to get up two or three times in the middle of the night.

make them! super easy, just drizzle some olive oil and spices and bake. either 30 min on low heat or 15 to 20 on 400-ish, just monitor them so they don't burn. Better than potato chips! (then again, I'm a freak LOL)

Just got back from the store. Had to find some spinach. lol. Wanted organic so went to that store to get it. Wow. What an ordeal, but they finally found it for me. I was prepared to substitute chard for it, which is also good, but wanted to try eekers' idea.

Also, got stuff for the fire and ice salad as I grow weary of the same old types of salads. Plus, this salad contains some hot/spicy stuff for a pop.

I also printed out others' ideas here. Thanks so much. Like keep it simple stuff, please I don't like to be in the kitchen for too long as the oven jumps over and burns my hand/arm or the knife jumps up and cuts my fingers. Heh. How's that for blame? Seems to be the trend these days - he blame game.
