Quickly brown slices in hot oil, dusting each side generously with seasoned salt. When fork tender and golden brown transfer to a 9 X 13 X 2 pan. Cover loosely with foil and bake at 75 F. about 20 to 25 minutes or until tender. Combine sauce, jelly and tomatoes that have been broken up with a fork. Heat on medium until hot, but do not boil. Spread mozzarella cheese over eggplant, then add sauce. Top with parmesan cheese and return to oven for 5-10 minutes to melt mozzarella. Serve immediately. |

(I confess I have not read the entire thread so if this is duplicate, please forgive.) Baked vegetables - I use yellow squash, mushrooms, sweet potatoes, zucchini - all or any combination thereof. Wash well, then slice the squash and sweet potatoes. Dry them well. Coat with olive oil and some kind of bread crumbs (I prefer organic and GMO free) and herb seasoning of your choice. Bake in the oven at 375 degrees for about 20 minutes and turn for a few more minutes. Voila! Easy and makes a meal for me when I'm by myself. Also excellent with a dipping sauce of your choice.
