Chicken Piccata
IngredientsFOR THE FLOUR MIX:
1/2 cup flour
2 tablespoons garlic powder
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
FOR THE PICCATA
1 pound or more boneless skinless chicken breasts, cut into 1 1/2 -inch cubes
3-4 tablespoon butter
1 tablespoon olive oil
1/2 cup white cooking wine
1 1/2 cup chicken broth
1/2 cup lemon juice
2 tablespoons capers, roughly chopped
1 teaspoon sugar
4 teaspoons dried parsley
egg noodles, or rice noodles
Instructions1. Combine flour, garlic, salt, pepper, and paprika in a plastic bag. Add chicken and shake to coat well. Set aside.
2. Cook noodles and put where they will stay hot.
3. Heat butter and olive oil in a large skillet over med-high heat. Put the chicken pieces in the pan and saute until golden brown. Remove chicken from pan, and set aside.
4. 4.Stir wine and broth into pan drippings, and cook.
5. Add lemon juice, capers, parsley. and sugar. Return chicken to pan. Reduce heat, and continue cooking until sauce thickens sand chicken is cooked thru. Serve over hot noodles.
